Ingredients

    1 t. canola oil
    4 skinless, boneless chicken breasts
    1 10 1/2 can fat free chicken broth
    1/2 c. water
    2 c. whole grain brown minute rice
    1 small onion, chopped and lightly browned
    2 c. peas and carrots, frozen

Directions

Place cubed chicken in hot oil and cook on medium until just cooked through. Add chopped onion. If pan is too dry a bit of chicken broth can be used. Add chicken broth and water. Heat to boiling. Add vegetables. Cook with the lid on, medium low for 5-7 minutes. Let sit for 5-7 additional minutes before serving. A very filling dish.
