Ingredients:
* Ground Turkey, 2 unit, yield from 1 lb raw
* Tomato Soup, 1 can (10.75 oz)
* Green Beans (snap), 10 beans (4" long)
* Broccoli, fresh, 1 cup, chopped
* Yellow Sweet Corn, Canned, 1 can (12 oz) yields
* Mashed Potatoes, 4 cup
* Low fat cream cheese, 1 cup
* Onions, raw, .5 cup, chopped
* Salt, 1 tbsp
* Olive Oil, 2 tbsp
Directions
Put olive oil and onion into a skillet. Brown the onion in the oil. (Just enough to make the onion sweat.) Add ground turkey and brown. Salt & pepper the meat to taste, but use no more than 1 teaspoon of salt in the entire recipe. Once the meat is brown, next add the rest of the vegetables and cook until almost tender over low heat. When cooked remove from heat.
In a clean pot, peel and boil potatoes and mash. Add cream cheese and blend together until smooth. Top the meat and veggies with mash potatoes. Put in the oven, under the broiler to until potatoes turn a light golden brown. (around 7-10 minutes)
Serve hot.
