Number of Servings: 6

Ingredients

    Curry Paste Ingredients:
    3 tbsp each of garlic, cumin, and coriander seed
    2 tsp each of turmeric, ginger, paprika, and chili powder
    1 tsp sea salt
    3 tbsp white vinegar

    Curried Lentils Ingredients:
    3 cups dried lentils
    3 cups chicken broth
    1 can coconut milk
    1 can diced tomatoes
    6 tbsp curry paste
    salt to taste

Directions

For curry paste, combine all dry ingredients thoroughly; then add vinegar. Store in fridge until used (up to 3 months)

For curry, rinse lentils and boil in chicken stock, then cover, and simmer over low heat for 15 minutes. Stir in the curry paste and coconut milk. Return to a simmer, and cook for an additional 10 minutes, until tender.
