Ingredients

    1 small sweet onion, sliced
    10 cloves garlic, crushed
    3/4 cup low sodium soy sauce
    1/2 cup vinegar (1/4 cup each rice and red wine vinegar)
    10 boneless, skinless chicken thighs (2 packs from costco)
    2 tablespoons brown sugar
    1 tablespoon minced ginger
    1 tablespoon black peppercorns
    2 bay leaves

Directions

Place chicken in a slow cooker. In a small bowl mix the onion, garlic, soy sauce, vinegars, ginger, peppercorns, brown sugar, and bay leaves and pour over the chicken. Cook on Low for 6 to 8 hours.
