Ingredients

4 cups flour
1 1/2 cups sugar
1/2 tsp baking soda
1/2 tsp corn starch
1/8 tsp lemon
1/2 tsp salt
1/3 cup butter
1/3 cup unsweetened applesauce
2 eggs
3 tbsp Silk (vanilla - light)
2 tsp vanilla extract
Directions
*Preheat oven to 400 degrees*
1)Mix all ingredients together with an electric handbeater.
2) Refrigerate for at least 2 hours.
3) Spread flour on a sheet of parchment paper. Take about half the dough, form a ball, and place on the paper. You may need to knead in extra flour if the dough is sticky. Place another sheet of parchment paper on top and roll out the dough.
4) Sprinkle additional flour on the dough and cut out your cookies.
5) Bake on a large pan, using a piece of parchment paper. This makes it much easier to transfer the cookies to your cooling rack. Bake for about 8-10 minutes, depending on the thickness of the cookies. I would make some thin and some thicker to see which you like better.
6) Roll out more dough and continue this process until all the dough is gone.
Makes about 72 small cookies.
