Introduction

Number of Servings: 6

Ingredients

    7 oz boneless smoked pork loin / pork chop, 1/4" cubed
    2 medium onions, chopped
    10 oz sauerkraut, washed & drained
    1 cup chopped parsley
    1 tsp caraway seed
    1 tsp brown sugar
    1 tbsp cider vinegar
    2 tbsp olive oil
    8 oz rigatoni

Directions

Cook rigatoni according to package directions.

Heat olive oil in a pan. Add cubed pork loin & finely chopped onion to the oil and saute until the onions are translucent and the pork slightly golden.
Add washed & drained sauerkraut, caraway seed, brown sugar & vinegar. Cook about 5 minutes.

Drain pasta and add the meat mixture to the pasta, tossing it well. Serve with a dollop of sour cream on the side.

Makes about 6 servings around 2 cups each.
