Ingredients

Turkey breast meat, cubed 8 ounce(s)
Broth, Vegetable, Low Sodium 2 cup
Flour, white, .25 cup
Canola Oil, 2 tbsp
Zucchini, 1 cup, sliced
Carrots, raw, 1 cup, strips or slices
Mashed Potatoes, 4 cup
Butter, unsalted, 2 tbsp
Salt, 1 tsp
Pepper, black, .25 tsp
Directions
Preheat 375.
Make a gravy with the broth, flour, and butter (or turkey fat), or use 2 cups of left over turkey gravy. Add salt and pepper to the gravy. Place turkey and vegetables in prepared 12 inch cast iron frying pan. Pour gravy over meat and vegetables, stir to mix. Season as desired. Spoon mashed potatoes (warmed if from the fridge) over all, smooth out.
Bake for 25 minutes until gravy is bubbly and potatoes are beginning to brown.
