Introduction

This recipe is right off the box. I have at times reduced the oil and butter by 1 T. each and it still turns out fine. This way is the way the family prefers. This recipe is right off the box. Ingredients

    1 1/2 c. white flour
    2/3 c. white sugar
    1/2 c. yellow cornmeal
    1 T. baking powder
    1/2 t. salt
    1 1/4 c. lowfat milk
    2 large eggs
    1/3 c. canola oil
    3 T. butter, melted

Directions

Preheat oven to 350 degrees
Prepare 16 - 18 muffins cups
Combine flour, sugar, cornmeal, baking powder and salt in large mixing bowl.
Whisk milk, egg, oil, and melted butter in separate bowl or large measuring cup.
Add wet ingredients to dry ingredients; stir just until blended.
Pour into muffin cups about 2/3 full.
Bake for 18-20 minutes or until toothpick inserted comes out clean. Serve warm with a bit of honey!
