Number of Servings: 4

Ingredients

    4 tilapia, snapper, or mahi filets (approx 16 oz total)
    1/4 tsp ground black pepper
    1 tsp Greek Seasoning
    1 Tbsp Olive Oil
    1 Tbsp minced garlic
    1/4 C. chopped onion
    1 can quartered artichoke hearts, drained (16 pieces frozen quartered artichoke hearts)
    1 14.5 oz can diced tomatoes, drained
    1/4 C. white wine

Directions

Preheat large sauté pan on medium-high 2–3 minutes.
Season both sides of fish with pepper and 1/2 teaspoon of the Greek seasoning (wash hands).

Place oil in pan; swirl to coat. Add garlic and onions; cook 1–2 minutes, stirring once, or until onions are slightly softened.

Add fish fillets (wash hands). Top with remaining ingredients (including remaining 1/2 teaspoon Greek seasoning).

Cover and cook 8–10 minutes, stirring vegetables once, or until internal temperature reaches 145°F (or flesh is opaque and separates easily with a fork). Cook time may vary depending on the thickness of the fish.

Serve fish and vegetables over pasta or brown rice if desired.

    Incredible!
    We don't like Artichokes, so I skip them. This is a great dinner dish and so easy to prepare. We have it at least once a month. - 12/28/14
