This warm potato salad is tangy, tasty, and good for you too! This warm potato salad is tangy, tasty, and good for you too!
Number of Servings: 4


    1 lb red tomatoes, large dice
    1.5 c green beans, cut in half
    ~9 Sun dried tomatoes halves, cut into pieces

    Vinaigrette Juice from 1 lemon
    1/4 of olive oil
    1 tsp honey
    1 tsp dijon mustard
    1 tsp herbs de provence or dried rosemary
    Salt and pepper to taste


Boil the potatoes until tender, adding the green beans during the last 5-10 minutes of cooking (depending on how crisp you like the green beans.

While the potatoes are cooking whisk together the vinaigrette ingredients.

Drain the potatoes and green beans, stir everything together in a large bowl. Enjoy!

Of course for less fat you can use less oil, but I would recommend using at least 2 tablespoons of olive oil.
