Ingredients

• 1 1/2 lbs. beef tips or a lean beef that you cut into cubes
• 1 tbs. extra virgin olive oil
• Salt to taste
• Black pepper to taste
• 1/2 tsp. crushed red pepper
• 4 cloves garlic, chopped
• 1/2 cup dry white wine (or white vermouth)
• 1 lemon, both zest and juice
Directions
• Bring meat to room temperature and pat dry.
• Heat the EVOO in a large, heavy skillet (or cast-iron skillet) over medium-high heat.
• When the oil smokes, add beef and caramelize before turning.
• Once evenly browned, about 5 minutes, add salt, both peppers, and garlic. Toss together and let this cook for about 2 minutes.
• Stir in lemon zest.
• Wait about a minute, then add the wine (or vermouth).
Turn off the heat, then add the lemon juice and toss to coat.
Makes 5 portions.
