Introduction

Number of Servings: 6

Ingredients

    4 egg whites
    6 whole eggs
    6 oz smoked salmon
    1 cup fresh spinach (or 1/2 cup frozen thawed, drained, dried)
    1/4 cup red pepper
    1/2 cup onion
    1 tsp oregano
    dash salt and pepper
    1 tbs olive oil
    1/4 cup water

Directions

-preheat oven to 350
-dice spinach, onion, red pepper
-slice salmon into thin strips
-break whole eggs into a bowl, add egg whites, mix in water
-add olive oil to oven safe 10 inch pan & heat
-add onions & red pepper, sweat for 1 minute
-add spinach, sweat additional minute
-add egg mixture, salt, pepper, oregano & begin to fold eggs toward center of the pan until almost set
-place sliced salmon on top of eggs
-place pan in oven, cook until eggs are firm and cooked through about 8 minutes
-remove pan from oven, let sit for 3 minutes
-slice into 6 pie shaped wedges
-serve with whole wheat toast and sliced fruit for breakfast or a salad and whole wheat roll for brunch/lunch/dinner
