Ingredients

    2 cups whole wheat pastry flour
    3/4 cup sugar
    1 cup unsweetened applesauce
    1/4 cup canola oil
    1 T vanilla extract
    1/2 t salt
    1 1/2 t baking soda
    1 cup walnuts

Directions

Preheat oven to 325 degrees.

-Mix sugar, applesauce, oil, and vanilla extract into large bowl.
-In a separate bowl, sift together pastry flour, salt, and baking soda.
-Add dry mix to wet slowly.
-Add walnuts and mix.
-Mash bananas in small bowl, then add to mix. The batter will be lumpy (do not overmix!)
-Fill 18-20 muffin cups 3/4 of the way and bake for 20-25 minutes.
-Remove from oven and cool for 10-15 minutes.
