Introduction

Ingredients

    1 white onion
    1 red bell pepper
    1 T. canola oil
    8 C. chichken broth (99% fat free)
    2 C. split peas
    1.5 C. diced ham
    salt and pepper to taste

Directions

Dice onion and sautee in oil in large soup pot. Add broth. Bring to a boil. Add peas and red peppers. Keep at a simmer until peas are broken down and soup has a velvety consistency. Stir in ham. Heat through. Season w/ salt and pepper to taste.

Makes 6 1-C. servings.
