Ingredients

All-Purpose White Flour, 1.75 cup
Baking Powder, 1 tsp
Baking Soda, 0.5 tsp
Salt, 0.25 tsp
Cream Cheese, 8 oz (1 brick, softened)
Butter, unsalted, 0.5 cup, softened
Granulated Sugar, 1 cup
Egg, fresh, 2 large
Milk, 0.25 cup
Vanilla Extract, 0.5 tsp
Raspberry Jam, 0.5 cup
confectioner's sugar for garnish
Directions
Makes 12 'jumbo" muffin cups.
Preheat oven to 350 degrees.
Grease and lightly flour 12 jumbo muffin cups, or 12 bun pans.
In a small bowl combine the flour, baking powder, baking soda and salt. Set aside.
In a large bowl, on medium speed on an electric mixer, beat together the cream cheese, butter and sugar until smooth (about 3 mins). Add the eggs and beat well.
Add the dry ingredients in 2 parts, alternating with the milk and vanilla. Spoon the batter into the cups, filling them about two thirds full. Drop 1 tbsp. of jam on top of each bun and swirl with the tip of a sharp knife to make a nice swirly pattern on the top of the bun.
Bake for 25-30 mins, or until a cake tester inserted in the center of the bun comes out clean.
Allow the buns to cool for 30 mins and then dust the tops with confectioner's sugar.
