Introduction

Easy one-pot meal, which is great for a cold winter night! Serve with a dollop of low-fat yogurt and garnish with cilantro for flavor. I add a little hot sauce for extra heat. Ingredients

    2 cups lentils
    1 lb chicken, no skin, fat removed
    8 cups water
    2 t chicken bouillon
    1 med onion, diced
    4 green onions, sliced
    3 cloves garlic, minced
    1 large tomato, diced
    1/2 red pepper, diced
    1 T chili powder
    1/2 t sea salt
    2 T fresh cilantro, chopped

Directions

Add all ingredients to a large stockpot, bring to a boil. Turn heat to low, and simmer together in a large stockpot for 15 minutes, or until chicken is cooked through. Remove chicken from pot, allow to cool briefly and shred chicken. In the meantime, allow the lentils to continue simmering. Return shredded chicken to pot and simmer until lentils are soft, about another 20 minutes. Serve, sprinkle with some chopped cilantro, and enjoy!
