Ingredients

    1 can 28oz enchilada sauce--1/2 cup uncooked rice --1 can black beans rinced, drained -- 1 pkg. frozen chopped spinach, thawed --11/2 cups shredded Cheddar cheese 6oz. --6 9" flour tortillas

Directions

Preheat oven to 350. In 13"x9" bakinf dish, spread 1/2 cup enchilada sauce. In pot, mix rice,beans,and 1 1/4 cups water. Cover, bring to boil. Reduce heat to low; cook untill water is absorbed and rice is tender, about 25 minutes. Squeeze spinach dry; stir intorice mixture with 1 cup sauce and 3/4 cup cheese; cook 5 minutes. Spoon mixture down center of tortillas; roll up. Place in dish. Top with remaining sauce and cheese. Bake untill bubbly. 15 minutes. If desired serve with guacamole and sour cream.
