Ingredients

    2 Chicken Breasts
    1 Cup Uncooked Barley
    2 Carrots
    2 Zucchini
    4 Celery Stalks
    1 White Onion
    8 Cups Low Sodium Chicken Broth
    1 Teaspoon Peppercorn
    1 Bay Leaf

Directions

Dice vegetables to desired size. Dice chicken to bite sized pieces. Combine all ingredients in pot.

Cook on stove at least 60 minutes or until chicken is cooked through and vegetables are at desired texture. This also can be cooked in a crock pot for 6-8 hours on low.

You can easily make this soup vegan by removing the chicken and using vegetable broth instead.

Makes 6 2-cup servings.

    Silly me -- here I was expecting that something called "Cauliflower Chicken Barley Soup", might have cauliflower as one of the ingredients...

    Sorry for the mediocre rating, but I assumed that I couldn't comment without leaving one. Did not make this -- wanted to us my cauliflower!
