A friend introduced me to this simple, filling soup. I lightened up the original recipe by using 12 oz. of turkey kielbasa and fat-free sour cream. A friend introduced me to this simple, filling soup. I lightened up the original recipe by using 12 oz. of turkey kielbasa and fat-free sour cream.

Ingredients

    5 large potatoes, peeled and cut into small chunks
    Add enough water to cover the potatoes plus one inch.
    1 lb. kielbasa sausage cut into bite-size pieces
    32-oz. jar of sauerkraut with juice
    1 large onion, diced
    16-oz. ctn. sour cream
    4 T. butter
    Salt and pepper to taste

Directions

Cut the peeled potatoes into small chunks and place into a saucepan. Add enough water to cover the potatoes and one ince more. Add the onions, sausage and sauerkraut. Simmer until potatoes are done. Add sour cream. Simmer for about 5 minutes until flavors have a chance to mix.
