Introduction

My son won't eat black beans so I made this with some red beans I had left over along with some shredded chicken I had left over from chicken tacos. My son won't eat black beans so I made this with some red beans I had left over along with some shredded chicken I had left over from chicken tacos.
Number of Servings: 6

Ingredients

    1 bell pepper, chopped
    1/2 med onion, chopped
    3 cloves of garlic, minced
    1 cup cooked red beans (made from dried beans, not canned)
    1 can (14.5 oz) of diced tomatoes, zesty chili style
    1 cup of shredded chicken
    6 cups water or broth
    1 tsp salt
    1/2 tsp ground cumin
    1/4 tsp chili powder
    1/4 tsp smoked paprika

Directions

Saute onion, pepper and garlic until soft. Stir in the can of tomatoes, beans, chicken and water. Add seasonings (you can add a packet of taco seasoning, instead of the individual spices).

Simmer for about 30 minutes. Makes 6 servings.
