Ingredients

    1 (10 oz.) pkg. chopped frozen broccoli
    1 can low-fat Cream of Mushroom soup
    1 pkg. Lipton Rice Sides- chicken flavored, cooked
    1 (10 or 12 oz.) bag of frozen chopped onion
    2 tbsp. olive oil
    1 (16 oz.) pkg 2% Shredded Cheddar cheese

Directions

Preheat the oven to 375 degrees. Follow the cooking instructions on the chicken flavored rice; it should take 7-10 minutes to cook. While it is cooking, heat the olive oil in a large skillet. Then add the chopped broccoli and onion. Saute for about 3-5 minutes. Then add the cream of mushroom soup, and heat to boiling. Stir in the cooked rice and 1 cup of the shredded cheddar cheese. Pour the whole mixture into a casserole or baking dish and top with the rest of the shredded cheese. Bake in the oven for about 15 minutes or until bubbly. Makes about 8 1-cup servings.
