Introduction

Ingredients

1 tbs soy sauce
1/8 tsp ground ginger
1/8 tsp garlic powder
1 packet (3/4 oz) Sunbird Fried Rice Seasoning
2 cups cooked and refrigerated brown rice
1 jar sliced mushrooms drained
1 bag (2 cups) frozen peas and carrots
3/4 cups egg beaters or other egg substitute
Directions
combine seasoning mix, soy sauce, garlic powder, ground ginger, and 3 tbs warm water in small dish. Wisk together until dissolved. Set aside.
heat large wok or skillet over medium heat and spray with pam. scramble egg beaters until cooked through use spatula to chop into bite sized pieces. Set aside in a bowl.
add frozen vegitables and mushrooms and cook over medium heat until warm all the way through. Remove from wok and set aside. Respray wok with non-stick spray and turn up to high heat. Add brown rice and seasoning mixture, stir well to combine then add vegitables and eggy bites back into wok and cook until heated through and there is no liquid left in the pan.
