Ingredients

    4 cans diced potatoes, drained
    3 C diced, lean ham
    2 C water
    1 can evaporated milk, 2% or fat free
    2 C milk, 1%
    5 oz. Velveeta
    2 T minced onion
    pepper to taste

Directions

In dutch oven, combine potatoes, ham, water, evaporated milk, milk, and minced onion. Heat over medium-low, stirring often to prevent milk from scorching. Continue to heat for 15 minutes. Add Velveeta. Heat an additional 5 minutes until cheese is thoroughly melted.

Makes 16, 1 C servings.

Suggestions: To make this even healthier, replace the Velveeta with cheddar cheese or use reduced-fat Velveeta.
