Introduction

Excellent beef stew. Serve over rice. Excellent beef stew. Serve over rice.
Number of Servings: 4

Ingredients

    2 pounds stewing beef
    1 small onion chopped coursely
    garlic powder, pepper, seasoning salt to taste
    2 tbsp oil

    Add:
    2 cups tomato juice
    1 can beef broth
    1 tbsp paprika
    2 tsp dried oregano
    2 tsp granulated sugar
    1 tsp dried cumin
    1/2 tsp crushed dried chillies
    2 bay leaves


Directions

Brown stewing beef and onions in the bottom of a large heavy pot. Season to taste with garlic power, seasoning salt and pepper.

Add remaining ingredients and bring to a boil. Cover and reduce heat to a simmer.

Simmer for 1 1/2 to 2 hours or until beef is tender.

Sprinkle flour or corn starch over the stew and stir in. Stir until gravy thickens.

I serve this over basmati rice.

Makes 4 - 1 cup servings.
