Ingredients

    1 Tbsp olive oil
    6 oz boneless country style pork rib, cut in strips
    1 1/2 sweet bell peppers any color, cut in strips
    1 med onion sliced
    1 can diced tomatoes, undrained
    1 can kidney beans, drained and rinsed
    2 cloves garlic, chopped finely
    salt and pepper to taste

Directions

Preheat oven to 35o deg. Season pork strips with salt and pepper. Heat oil in large oven proof skillet. Add garlic, saute until golden. Add pork strips, cook and stir untill browned on all sides. Add peppers and onions.. Stir to coat with oil. Season with salt and pepper, cover and cook over med-low heat until vegetables are soft. Add beans and tomatoes with juice. Place in 350 deg oven 25-30 minutes, until meat is tender.
