Introduction

Ingredients

    * *Flour, white, 2 cup
    * Salt, 1.25 tsp
    * Butter, unsalted, 125 grams
    * Asparagus, fresh, 400 grams
    * Parmesan Cheese, grated, 100 grams
    * Milk, 2%, 300 mL
    * Egg, fresh, 4 medium

Directions

Make the dough in mixer: place flour + salt, pulse 3 seconds, then add the cold butter cut in small pieces and place it on top of the flour, pulse 2 or 3 seconds. Then add 125 ml of water, and pulse until the dough forms a ball, then stop. Wrap in Shrink Wrap and put in fridge until ready to roll, up to a day.

Quiche itself: blanch the asparagus 5 mn, then place in colander, then dry with clean kitchen towel. Cut in 2 inch pieces.

Set oven to 410 F.

Spread the dough and place it in buttered mold. Stab the bottom with a fork. Sprinkle half the parmesan on the bottom, add the asparagus.

Mix the 4 eggs in a bowl, and add little by little the milk, add salt and pepper, and pour over the asparagus.

Cook in oven for 35 mn or so, until top is golden.
