Introduction

This is a very basic recipe. I am trying to go as low sodium and low calorie as possible. The next person may find it bland, but feel free to add other spices if you wish. Ingredients

    2 cups green peppers, sliced
    2 cups onions, sliced
    2 cups green beans
    2 cups mushrooms, sliced
    3 T fresh cilantro, chopped
    1 T garlic powder
    1/4 t ground black pepper
    1/2 t paprika
    1 T Extra virgin olive oil

Directions

1. Preheat oven to 400 degrees.
2. Add oil and spices to baking dish and stir. (I use a Pyrex)
3. Add vegetables and toss.
4. Bake for 30 minutes, stirring half way through.

Makes 6 3/4 cup servings
