Introduction

I used to make this for my Dad as a kid and he loved it. It's so easy and quick - especially if using leftovers and quick-cooking rice. Ingredients

    1 can Campbell's HR Cream of Celery Soup
    1 can Campbell's HR Cream of Mushroom Soup
    1 can Campbell's Cheddar Cheese Soup
    ~1 cup shredded, cooked turkey (or chicken)
    ~1 cup of cooked broccoli
    ~1 cup cooked brown rice
    ~1 cup of shredded low-fat cheddar cheese

Directions

Preheat oven to 350. In a large bowl, stir the three soups together, then add turkey, rice and broccoli and stir well. Pour mixture into 9x13 pan and bake, covered, at 350 for about an hour (less if turkey, rice, and broccoli are still warm from cooking.) When soup is bubbling and heated through, uncover and sprinkle low-fat cheese over top. Continue baking until cheese is melted.

Makes about 8-10 1 cup servings. Good with salad and breadsticks or biscuits.

    I tried this last night and loved it! My grocery did not have cheddar cheese soup so I used Healthy Choice brocollie cheese and it worked great! Also skipped the low-fat cheese on top and did not miss it. Great, creamy comfort food! - 1/14/11

    This was incredibly good! We didn't have cream of celery, so I just added a half can of 1% milk instead, for the liquid. - 1/23/11
