Ingredients

    5 links Hot Italian Sausage
    2 small zucchinis, chopped, 1/2" squares
    1 red bell pepper, chopped 1/2" squares
    1 yellow or green bell pepper, chopped 1/2" squares
    3 cloves garlic, chopped
    4-5 small tomatoes, chopped.
    Anise seed (optional)
    2-3 tbsp olive oil

Directions

1) chop all vegetables into approx 1/2" squares or cubes, except garlic
2) coarsely chop garlic.
3) brown Italian sausages just enough to make them easy to slice. They will cook the rest of the way with the rest of the ingredients. Let cool before slicing. Slice into 3/8"-1/2" thick rounds..
4) Saute all vegetables in same skillet used to cook sausage using olive oil as needed. for about 5 minutes.
5) Add sliced sausage to skillet.
6) (optional) Add anise seed.
7) Cover skillet and cook for approx 20 minutes, stirring occasionally.
