Ingredients

1 cup Healthy Request Cream of Mushroom Soup (1 regular sized can)
1 cup raw celery, diced
I cup chopped onion
1 cup sliced Mushrooms
1.5 cups Chow Mein Noodles
2 cups prepared Brown rice
6 tsp Chow Mein Seasoning mix
1 cup Bamboo Shoots
1 cup Sliced water chestnuts
10 oz boneless skinless split chicken breasts - cooked and cut to bite size pieces
1 cups Bean Sprouts
1/2 cup Bean sprouts juice
2 cups chopped fresh broccoli - steamed
Directions
Preheat oven to 350d
In large skillet, saute onion, mushrooms, and celery until tender
Add in cooked chicken pieces
Add in water chestnuts, bamboo shoots, bean sprouts and bean sprouts juice. Stir to combine thoroughly.
Add rice, seasoning, and soup and thoroughly mix again.
Simmer for 10 minutes.
Gently stir in steamed broccoli.
Pour ingredients into a casserole dish sprayed with nonstick spray
Top with chow mein noodles
Bake for 15-20 minutes until heated through and bubbly
*Can top with reduced sodium soy sauce for more flavor (not in nutritional info)
