Introduction

Ingredients

    2 medium eggs
    1/4 cup tomato juice
    fresh-ground pepper to taste (the more, the better!)
    salsa to taste (I use a tablespoon or 2.)
    a serving of thin-sliced deli turkey (about 6 pieces)

Directions

Spray a skillet or shallow saucepan with non-fat, non-stick cooking spray.

Heat the skillet to high.

While heating, combine eggs and tomato juice with a whisk.

Then add turkey and salsa and give a good stir.

Top with fresh-ground black pepper and pour into heated skillet.

Let cook enough to begin to look like an omelette, but then stir. Continue stirring occasionally just until eggs are cooked.

Pour mixture into a bowl and enjoy a low-calorie breakfast dish! Is also excellent on toast! Makes 1 serving.
