Introduction

Number of Servings: 18

Ingredients

    1 cup Splenda
    1/2 cup unsweetined applesauce (replaces
    shortening )
    1 tsp vanilla
    1 cup RIPE Bananas mashed
    2 cup Flour
    1/2 tsp Baking Soda
    1/2 tsp Baking Powdered
    1/4 tsp nutmeg
    1/4 tsp cinnamon
    1 cup chopped pecans

Directions

Turn oven on to 350 degrees.
In a large bowl cream Splenda and applesauce. Add eggs and vanilla and beat until fluffy. Add bananas. In a second bowl mix flour,baking soda, baking powder, nutmeg, and cinnamon. Add htis mixture to the banana mix and stir in nuts. Pour into a greased ( Pam Spray ) 9x5 loaf pan and bake for 45 to 50 minute. It is done when toothpic poked in middle comes out clean.

Cool in pan for 10 to 15 minutes. Makes 18 1/2 inch servings.
