Ingredients

    Half a package of frozen spinach thawed
    half a package of reduced fat cream cheese
    one cup mushrooms
    1/4 cup onion
    garlic
    1 tsp olive oil
    1 cup Uncle Ben's Instant Brown Rice
    1 chicken boullion cube

Directions

Bring water to a boil and add 1 cup of rice and the chicken boullion cube. Bring to a boil and reduce heat to simmer for approximately five minutes until the water is absorbed. Meanwhile, saute onion in extra virgin olive oil for a minute and then add mushrooms. Cook until the rice is finished. Add thawed spinach, cream cheese and mushroom mixture to the rice, stirring until combined. Then serve!
