Number of Servings: 4

Ingredients

    1 14 oz can salmon, skin removed and flaked
    1/4 cup egg beaters or 1 beaten egg
    1/2 small onion, chopped
    2 tsp black pepper
    1 TB cornmeal
    1 TB olive oil for pan

Directions

Heat oil in a nonstick skillet

Mix all ingredients.

Drop into skillet

Cook until golden brown on each side.

I use a small ice cream scoop and make 8 patties, slightly mashing them with a spatula after a minute of cooking time then flip. Two patties is one serving.

    This is a very quick and easy recipe... I did add some Old Bay to spice things up a bit. A good base recipe. - 1/18/12
