1 - 15oz can - Black Beans, rinsed, drained and partially mashed
1/2 cup canned corn, drained
1/3 cup picante sauce
1.4 cup water
2 tsp chili powder
Cooking Spray
5 oz Cabot 75% Reduced Fat Sharp Cheddar
4 TBS canned green chilies, divided
Directions
1)Preheat oven to 375 degrees.
2)Combine beans, corn, salsa, water, chili powder and 2 TBS of green chilies.
3)Pour into a small casserole dish coated with cooking spray.
4)sprinkle with cheese and remaining chilies
5)cover and bake at 375 for 30 minutes.
6)Uncover and cook an additional 5 minutes
Serve with tortilla chips (not included in nutritional information.)
