Introduction

Ingredients

    2 sweet potatoes, peeled & cut into 2" chunks
    1 large onion, diced
    2 garlic cloves, minced
    1 15-oz can red kidney beans
    1 large red bell pepper, seeded and chopped
    1 14.5 oz can diced tomatoes
    1 Tbsp chili powder
    1 Tsp smoked paprika
    1 Tsp chipotle chili powder (or 1-2 chipotle peppers in adobo, chopped --- in a can in the Mexican food section)
    1/2 Tsp kosher salt
    1 cup water
    1/2 cup orange juice

Directions

Add all ingredients to a slow cooker. Cook on LOW for 6-8 hours or until sweet potatoes become tender. Note: adding chopped chipotle pepper in adobo will add quite a bit of spice. Use low-sodium canned ingredients and omit salt to reduce sodium, if desired. Top with a dollop of nonfat plain yogurt to add a little protein and help balance the spice with something cool (not included in nutritional info).
