1/4 CUP RAISONS/SULTANAS
2 EGG WHITES
1/2 CUP SKIM / NON FAT MILK
1/2 CUP HONEY
1/4 TEASPOON BAKING POWDER
1 1/2 CUPS SIFTED S/R FLOUR
1 TEASPOON GROUND CINNAMON

MAKES 10-12 SMALL CUPCAKE (65 GM) SIZED MUFFINS
OVEN TEMP: 180 DEGREES CELCIUS
YOU WILL NEED:
12 CUPCAKE TRAY
1 LARGE BOWL
WOODEN SPOON
SPATULA
MEASURING CUPS / SPOONS
PLEASE NOTE:
AS THIS HAS NO BUTTER OR OIL, USE A NON-STICK/TEFLON CUPCAKE TRAY - MIXTURE WILL STICK TO PATTY PAN CASES IF YOU CHOOSE TO LINE YOUR TRAY WITH THEM.
1. Set your oven to 180 degrees celcius (fanforced)
2. Grate apple, seperate egg whites, sift flour and measure out your other ingredients.
3. In a large bowl mix wet ingredients until well combined - use a spatula to scrap all the honey out of your measuring cup.
4. Add dry ingredients to the wet ingredients and using a wooden spoon, mix until just combined. It is important not to over mix.
5. Spoon mixture into patty tray and bake in oven for 20-25 minutes or until muffins are soft and springy.
6. Cool on a cooling rack. These can be frozen to be kept freash and used as a daily snack.
