Ingredients

1 1/4 cups amaranth flour
1/2 cup brown rice flour
1/3 cup tapioca starch
1/2 cup brown sugar
1 1/2 tsp xanthan gum
1 tbsp GF baking powder
1/2 tsp salt
2 eggs
1 tbsp grated orange zest
1 cup freshly squeezed orange juice
2 tbsp olive oil
1/2 cup sllivered almonds
1/2 cup dried blueberries or cranberries (using dried blueberries ensures that these muffins do not have a bluish tinge, as it would with fresh or frozen blueberries.
Directions
In larg bowl combine first 7 ingredients and mix well. Set aside
Using mixer beat eggs, zest ,juice and oil until combined. Add dry ingredients and mix just until comilned. Fold in almonds and blueberries.Spoon batter evenlyinto muffin tin. Let stand for 30 min. Make in 350 oven for 18-20 min. or intil firm to the touch. Remove from the an immediately and let cool completely on a rack.
