Ingredients

    *Swanson Natural Goodness Chicken Broth (low sodium), 2 cans
    *Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.) 1/2 potato shredded, the rest cut into 1/4 inch cubes.
    *Half A Yellow Onion, 1 serving Sliced thinly
    *Cabbage, green, 2.5 cup sliced thinnly
    Beans, white, 1 cup
    *Extra Virgin Olive Oil, 1.5 tbsp
    *Citrus Ponzu, 0.5 tbsp
    *Apple Cider Vinegar, 1 tbsp
    Garlic 4 cloves
    ground tarragon
    bay leaf
    dry ground mustard
    salt and pepper to taste

Directions

carmelize half of the onions in olive oil.
turn up head and add potato chunks. Cook until lightly browned.
add remaining onions and garlic. Cook 4-5 minutes.
add stock plus 1 cup water, beans, shredded potato (to thicken) ground tarragon, bay leaf, salt and pepper, dry ground mustard, cider vinegar, and ponzu. Bring to a simmer.
add cabbage. Cook 10-15 minutes.
turn off heat and add a squeeze of lemon.
serve plain or with fresh grated parmesan.
