Introduction

Incredibly yummy, spicy hearty food. Love the flavor and it is good for you too (maybe not counting the chorizo, but it adds a great flavor that can't be missed). Incredibly yummy, spicy hearty food. Love the flavor and it is good for you too (maybe not counting the chorizo, but it adds a great flavor that can't be missed).
Number of Servings: 8

Ingredients

    10 oz. Beef Chorizo
    1 Green Peppers (bell peppers), chopped
    Beans, black, 3.75 cup (I use 30 ounces of fresh after soaking)
    2 cans Diced Tomatoes & Green Chilies - Rotel
    2 cloves Garlic
    1 tbsp Chili powder
    1 tsp Cumin
    1 tsp Oregano
    1/4 tsp Red Pepper
    2 cups Chicken Broth or Bouillon

Directions

If you are using fresh or dried beans, prepare them per directions (you will want to cook them after soaking, to soften them prior to making this dish).

Add chorizo and peppers to a pot. Cook until peppers are tender. Add rest of ingredients. Bring to a boil. Reduce to a simmer and cook for 20-30 min or until desired consistency.

Makes 8 2-cup servings.
