Ingredients

    3 tablespoons low-fat mayonnaise
    1 1/2 tablespoons Dijon mustard
    1 teaspoon grated lemon peel
    1 6-ounce can solid white tuna in spring water, drained
    2 tablespoons fresh lemon juice
    1 15- to 16-ounce can garbanzo beans (chickpeas), rinsed, drained
    1/2 cup chopped sweet onion (i.e. vidalia - cut in 1/2 if using regular onions)
    1 Tbsp capers
    1/2 cup chopped fresh Italian parsley


Directions

Whisk together mayonnaise, mustard, lemon juice and lemon peel. In a separate bowl, combine tuna, garbonzo beans, chopped onion, capers and parsley. Add dressing to tuna mixture and mix well. Serve over a bed of greens for a light lunch or health afternoon snack.
