Introduction

I didn't have enough banana so I subbed in some pumpkin. The two together just need to add up to 1 cup. Number of Servings: 16

Ingredients

    1 cup whole wheat flour
    3/4 c all purpose flour
    1/2 c sugar (brown-should be packed or white)
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    3/4 c mashed very ripe banana
    1/4 c canned pumpkin
    1/3 cup unsweetened applesauce
    2 large egg whites
    1 large egg
    1/4 c chopped walnuts (optional)

Directions

Blend all dry ingredients together in one bowl and all wet ingredients in another. Mix together until just moistened. Sprinkle nuts on top or blend them in- depends on your preference. Pour into greased loaf pan. Bake in a preheated 350 degree oven. Takes 40-50 minutes depending on your oven. Bake until a toothpick inserted in center comes out mostly clean. cool in pan on rack for 10 min, then remove from pan and cool completely on rack. Makes 16 servings depending on how you slice it.
