Introduction

Spelt and Oat flour are listed and replace the originally called-for all purpose flor, but almost any flour blend will work. You can add anything you like to these muffins- fruit, nuts, cheese (omitting the nutmeg), etc. They freeze well, and are easy to make. Ingredients

    1 1/4 cups spelt flour
    3/4 cup oat flour
    1 tbsp baking powder
    1/2 tsp salt
    1/4 tsp grated or ground nutmeg (optional)
    2 large eggs
    1 cup rice milk
    2/3 cup packed brown sugar
    1/4 cup extra light tasting olive oil
    1 tsp vanilla extract

Directions

Preheat the oven to 400 degrees.

In a large bowl, mix together the flours, baking powder, salt and nutmeg. Set aside. In another bowl combine the remaining ingredients. Add to the dry ingredients with a few swift strokes- do not over mix. Divide the batter among the muffin cups.

Bake until a toothpick inserted into 2 or 3 of the muffins comes out clean, about 17 minutes.

Makes 12 Muffins.
