Ingredients

* 2.5 c. cooked wheat berries
* 1 tbsp. extra virgin olive oil
* Pepper to taste
* ˝ tsp. thyme
* 2 tbsp. chopped parsley
* ˝ c. chopped onion
* 1 c. chopped mushrooms
* 1 c. chopped red pepper
* 1/2 c. chopped celery
* 1/2 c. diced carrots
Directions
Makes appx. 6 - 1/2C servings, each one with 1 starch and a small amount of veggies.
If cooking your berries fresh, use 1C wheat berries and 3C water, and add a bay leaf. 1C makes 2.5C cooked.
Sauté onion, celery, mushrooms, pepper and carrots in olive oil until wilted and browning - about 10 minutes. Add thyme, parsley and pepper to taste. Add wheat berries to veggies and cook until heated through.
Number of Servings: 6
