Introduction

My husband thinks this is even better than fried rice we get at the Chinese restaurant! My husband thinks this is even better than fried rice we get at the Chinese restaurant!
Number of Servings: 4

Ingredients

    Cooking Spray
    1/2 Cup Shredded Carrots
    5 Scallions, chopped (3 scallions will go in to saute, 2 scallions will go in later)
    2 frozen chicken tenders, thawed & chopped into very small pieces
    1 egg
    2 cups Trader Joe's Organic Brown Rice (frozen) (just use 1 of the packages in the box)
    1/2 cup frozen peas, thawed
    1/4 cup low-sodium soy sauce
    2 Tbs teryaki sauce

Directions

Shred carrots, chop scallions, and cut up chicken.
Get peas out of freezer to thaw.

In a large skillet sprayed with nonstick cooking spray, saute chicken, carrots & scallion together until chicken is cooked. Remove from skillet and set aside.
Crack egg into skillet and gently "scramble".
Add chicken mixture back into skillet.
Add rice, remaining 2 scallions, peas, soy sauce and teryaki sauce. Stir while cooking for 2 minutes.
