Ingredients

    2 cups flour
    1 1/2 tsp baking soda
    1/2 tsp salt
    1 cup brown sugar
    4 over ripe bananas
    3/4 cup salted butter (melted and cooled)
    2 eggs
    1tsp vanilla extract
    1/2 cups walnuts (or pecans)

Directions

(Makes 72 mini muffins- 1 serving equals one mini muffin)

Preheat oven to 350 degrees (put paper liners in mini muffin tins)

In large bowl, combine flour, soda, salt and set aside. Mash 1 of the bananas in a small bowl so they still have some texture and set aside. With an electric mixer, whip the other 3 bananas and brown sugar together for at least three minutes. Add melted butter, eggs, and vanilla and beat until well combined. Mix dry ingredients in by hand just until barely blended. Fold in the nuts and remaining banana. Spoon batter into mini muffin tins until they are about 2/3 full.

Bake for approximately 10-15 minutes... at 10 minutes start checking regularly until a toothpick stuck in the muffin comes out clean. Let cool for at least 5 minutes before removing from pan.
