Ingredients

    1 bag Success Boil in Bag Brown Rice
    4 c. water
    2 packets powdered chicken broth
    1 15 oz. can Dark Red Kidney Beans
    1 large red tomato, chopped
    1/4 c. onion, chopped
    1/3 c. fresh cilantro, chopped
    1/3 c. lime juice
    salt to taste

Directions

Place water and chicken bouillon packets in saucepan. Use this water to cook boil in bag rice per directions on box.

When rice is done cooking, drain water and set bag of rice aside.

In original saucepan, add onions, tomatoes, cilantro and kidney beans and heat over medium heat for a few minutes.

Remove rice from bag and add to tomato mixture. Add lime juice to mixture and stir. Add salt to taste.

Makes approximately 4 1 c. servings.
