Introduction
These muffins are delicious....great for Breakfast with fruit! These muffins are delicious....great for Breakfast with fruit!Number of Servings: 15
Ingredients

1 cup Oatmeal
3/4 cup cut up dates
2 cups boiling water
1/2 cup margerine or butter
1 cup brown sugar
1/4 tsp salt
1 cup flour
1 tsp baking soda
1 egg
1/2 cup of coconut
1/2 tsp cinnamon
Directions
Pour 2 cups of boiling water over the oatmeal and dates.
Let cool.
Mix the rest of the ingredients together.....add to date mixture.
I should tell you now I always seem to have to add more water at the end.....the mixture seems too dry to me.
Pour into muffin tins.
Bake at 375 for approx. 20 minutes.
Makes about 15 muffins
