Ingredients

    0.5 cup raw cashews soaked 8 hours, rinsed and drained
    .25 tsp himalayan pink salt
    32 oz (4 cups) fresh bottled water
    1 packet truvia

    Vitamix Blender needed

Directions

grind soaked rinsed and drained cashews with .5 cup water, salt and truvia in Vitamix starting on low and slowly turning up the dial for about 30 seconds. scrape down blender and go again. turn off the machine and come back if you can after it has settled and repeat, this time flipping switch to high. scrape down sides of blender. you want a thick pudding like cream. spoon into glass container.
you can use this as the base for ckreamy sauces, or smoothies by diluting with water or lemon/orange juice (fresh) as needed.

try adding dairy-free L. acidophilus powder and culturing it in the fridge. tastes like yogurt the next day.

what to do with what clings to blender? Make a smoothie or Ani Phyo's creamy curry dressing (apple, a little olive oil, garlic, curry powder, lemon juice & voila - yummy on raw kale julienned)

add powdered vanilla bean to your kream and tell my it's not like the best whipped topping!

to make a quart of cashew milk add the remaining 3.5 more cups of water to the blender. strain if you like in a nut mylk bag or just pour it in a jar. keeps about 4 days max in fridge.

add this kream to my pumkin pie soup recipe. :)
