Introduction

This was an improvised meal put together with items on hand one evening. It turned out very well! The seasonings were not exactly measured out--I've estimated here and you can certainly do it to your liking. (If I had had tomatoes on hand, I would have included them....) Ingredients

    1.5 lbs haddock (3 fillets)
    1/4 cup lemon juice (and 1 lemon, sliced--optional)
    1 pat butter
    1 small onion, chopped
    3 Tbsp olive oil
    1/3 c crumbled fat free feta cheese
    30 (approx) pitted kalamata olives, cut in half
    1 Tbsp garlic powder
    1 Tbsp dried basil
    1 Tbsp dried oregano
    3 Tbsp white wine



Directions

Saute chopped onion in butter.

Arrange haddock fillets in casserole dish.
Spread olive oil across each fillet.
Spread sauteed onions across fillets.
Spread feta cheese and olives across fillets.
Sprinkle wine and olive juice across the fish.
Sprinkle seasonings (garlic powder, basil, and oregano)
(Optional) arrange lemon slices along top of fish.

Bake at 350 degrees until fish is cooked through (approximately 10 minutes)

Makes 6 (4-5 inch long) servings.
